Cold Smoked Trout and Char

At Cunningham's, we follow
the Scottish tradition. Our cold smoked fish is sold frozen
and unsliced. It is very easy to slice with a good knife after
it is thawed. Slicing it as you use it accomplishes two desirable
ends - superior texture and minimal oxidation over its shelf
life.
We vacuum-pack various size portions from
160 grams up to 400 grams. They are pre-trimmed - you're buying
only the premium part of the fillet. |
Rainbow Trout
- our flagship product is rich in flavour, moist but firm
in texture. It can be used anywhere traditional smoked salmon
is used. It is similar to salmon but distinctive. |

Arctic Char - unique
and exotic, cold smoked Arctic Char is supremely smooth
in texture and delicate in flavour. Those who like it, like
it a lot! |

Paté
|
All our patés are made with cold
smoked fish and then frozen (rather than canned) to preserve
the integrity of the cold smoked process. We use only our
own cold smoked fish, butter, freshly squeezed lemon juice,
white wine, pepper, paprika and dill weed in our paté
preparations. It is all sold in 210g containers. They have
received many rave reviews and are particularly popular at
gift-giving time. |

Candied Trout
A favourite west coast treat,
first developed by native peoples renowned for their creative
smoked fish delicacies. At Cunningham's we put a twist on
the idea by using trout instead of salmon. Our candy is marinated
then cold smoked for 25 hours. When it has lost about 35%
of its moisture it is finally kippered. It is sold vacuum-packed
and frozen in portions between 110 and 180 grams. |
